Process

Product Details

  • 100% Maguey Espadín (Agave Angustifolia)

  • Artisanal Production Process

  • Aged for 3 to 4 months in white oak barrels.

  • Alcohol Content: 40% Vol.

  • Net Content: 750 ml

  • Santiago Matatlán, Oaxaca

  • Hand-harvested after 8 to 10 years of growth

  • Cooking: The piñas are cooked for three days in underground cone-shaped stone ovens heated with wood and volcanic, river, and quarry stones

  • Crushing: Stone Tahona method

  • Fermentation: 100% natural through endemic yeasts

  • Distillation: Double distillation process in 350-liter copper stills
